My mom used to make something similar to this growing up. She would always roll them into balls and keep them in the refrigerator….six kiddos in my family, they did not last long!! She got the recipe from a lady she struck up conversation with at the local grocery store.  I always think….oh before the days of the internet and Pinterest, how people got all of their fun recipes. Face to face contact! These little snacks are such a treat you will really enjoy them. And do a new mom a favor…make them for her when she comes home from the hospital, she will thank you immensely!! It is really the perfect new mama treat….really they are perfect for everyone, especially kiddos!! I just personally really love them when you are nursing a baby and hungry all. the. time.

photo 4 (1) Power Bars sharingthyme.com 1. Place all ingredients except chocolate into a stand mixer. Mix until well incorporated. Add chocolate and mix a few times until chips are mixed in.

Power Bars sharingthyme.com 2. Lightly spray a pan with cooking spray or olive oil. Place power bar “dough” into pan and press down with the back of a spoon. Cover with plastic wrap and place in refrigerator for at least an hour.

Flip over pan onto a cutting board and knock pan lightly to get the bar to release. Cut into bar sizes. Depending on size of pan and how large you prefer your bars. Slice and keep on cutting board in the fridge with plastic wrap on top. This is for easy serving. Or, put into rubbermaid container stacking on top of each other with a sheet of parchment in-between each layer. You may wrap individually also and tie with string.

4. Keep in Fridge or freezer. Enjoy!!

1 cup honey

1 cup peanut butter

1 cup coconut, unsweetened

1 cup wheat germ

1 cup dark or semi sweet chocolate mini chips, or chocolate bar cut up into small chunks

1/2 cup flax seed meal

1/2 cup dry milk

1 1/2 cup quick oats

 

Method:

1. Place all ingredients except chocolate into a stand mixer. Mix until well incorporated. Add chocolate and mix a few times until chips are mixed in.

2. Lightly spray a pan with cooking spray or olive oil. Place power bar “dough” into pan and press down with the back of a spoon. Cover with plastic wrap and place in refrigerator for at least an hour.

3. Remove from fridge and loosen sides with a knife. Flip over pan onto a cutting board and knock pan lightly to get the bar to release. Cut into bar sizes. Depending on size of pan and how large you prefer your bars. Slice and keep on cutting board in the fridge with plastic wrap on top. This is for easy serving.
